Ingredients
575g dessert plums...Here you go, Gill:<br /><br />Ingredients<br />575g dessert plums<br />275ml sour cream<br />25g caster sugar<br />3 egg yolks<br />1/2 level teaspoon mixed spice<br />1 level teaspoon ground cinnamon<br />50g demerara sugar<br />1 500g block of shortcrust pastry<br /><br />Preheat oven and a baking sheet to gas mark 6, 400 degrees F, 200 degrees C.<br /><br />Grease a 10" fluted flan tin.<br /><br />Roll out pastry and line tin. Halve the plums and remove the stones. Beat together the sour cream, caster sugar, egg yolks and mixed spice. Pour into pastry case and arrange plums over the top, flat side up. Place flan on baking sheet and bake for 20 minutes.<br /><br />Mix the cinnamon with the demerara sugar and sprinkle over the top.
